The coffee comes from Chambaku Farm in the Villamaría, Caldas region, managed by farmer Juan Felipe Restrepo.
After numerous tests to improve the residual taste and physical appearance of the green beans, an experimental batch was created using a specialized milling process to decaffeinate them, resulting in a cleaner and more pleasant coffee. For this batch of decaffeinated coffee, an effort was made to take it a step further by decaffeinating a coffee produced through the washed fermentation processes at Finca Chambaku.
The result is a coffee with more pronounced acidity and fruity notes, enhancing the characteristic sweetness of the decaf and producing a more complex cup.
