Tarrazú, south of San José, is one of Costa Rica’s top coffee regions, producing about 40% of the country’s coffee.
This lot uses a carefully controlled fermentation process. Ripeness is measured with Brix readings before the cherries are pre-dried for 48 hours, fermented in sealed tanks with close temperature monitoring, and dried on raised beds for about 30 days.
